Hi! I’m Sofie.

I’m a pastry chef, a cake enthusiast and a maker of treats. I started Solo Bake in the summer of 2020. I want to make simple and fresh buttercream cakes using the very best ingredients – cakes that are stylish and colourful and fun.

I’ve been working as a pastry chef for the past eight years but my background and training is as a sculptor. I could never do just one thing! For me, baking is all about creativity and trying out new ideas. I love the process of testing ingredients out over and over again until I find the magic in them. Until I get the feeling of using them exactly right.

And cake is inherently joyful. It marks our special moments. It adds something unique to the days that we spend together and remember the most. So I’m making cakes for those days – to make more of them.
